Recipe of the Week: Pasta Arrabiata

Pasta Arrabiata

This is a spicy pasta dish that is very fast and easy to make. Pasta Arrabiata means “Angry Pasta” in Italian.

Ingredients:

4 Tbsps. Olive Oil

5 cloves of minced garlic

2 pcs. fresh whole tomato, diced

1 can straw mushroom, drained and quartered

1 pc. red chili, miced

1/4 cup vodka or white wine

1/4 cup soup stock

10 leaves of fresh basil, chopped

1/8 tsp. fresh ground black pepper

1/4 tsp. salt

1/4 cup parmessan cheese

250 grams penne pasta, cooked 

Procedure:

  1. Boil water (rolling boil) and add 1 tablespoon oil.

  2. Drop pasta and set timer for 8-10 minutes, cover pasta pot.

  3. Test pasta for doneness, noodles should still be firm but not soggy.

  4. Drain immediately soaked with ice water to stop the cooking process, drain and toss with 1 tablespoon oil to prevent from sticking.

  5. Heat a pan and pour olive oil.

  6. Saute minced garlic, do not let it brown (1-2 minutes), flame should be medium.

  7. Add mushroom, tomato and basil, saute for 2-3 minutes.

  8. pour vodka or white wine, flambe for few seconds until flame is put off, simmer for 1 minute.

  9. Add soup stock, salt, ground black pepper, simmer for 2-3 minutes under low flame until stock is reduced.

  10. Add the minced red chilli, quickly mix and add the pasta.

  11. Cook the pasta with the sauce for 1 minute. Put off flame.

  12. Transfer pasta in clean serving plate.

  13. Top generously with parmessan cheese and whole basil leaves.

  14. Serve with bread.
